Bacon & Vegetable From: Rachel Tysoe

The mix of vegeables and bacon make this into a delicious, warming and filling soup.

COOKING INSTRUCTIONS

INGREDIENTS
  • 1 Onion
  • 1 Leek
  • 3 Potatoes
  • 4 Carrots
  • 4 pints Chicken Stock
  • 250g Bacon Lardons
  • Salt and Pepper
METHOD
  1. Dice or cube all of your vegetables and bacon.
  2. Add bacon and vegetables to the pan.
  3. Add hot stock, adding one stock cube per pint of water to the pan. Add the salt and pepper.
  4. Bring to the boil and simmer for one hour stirring regularly.
