Asparagus, Courgette & Petite Pois From: Frank Fallows

A refreshing refined soup with a real depth of flavours that really work together to bring you a taste of heaven.

COOKING INSTRUCTIONS

INGREDIENTS
  • 1 Onion
  • 4 Garlic Cloves
  • 6 Sprigs Asparagus
  • 1 Courgette
  • 1 can Petit Pois
  • 4 Fresh Mint Leaves
  • 1 tsp Rapseed Oil
  • 1.5 ltrs Vegetable Stock
METHOD
  1. Chop the onion and garlic, place in pan with oil on a low heat.
  2. Add the finely chopped asparagus and courgette, sauté on low heat for 15 minutes.
  3. Add half of the petite pois and sauté on very low heat for further 3 minutes.
  4. Add the vegetable stock, simmer on low heat then blend for 30 seconds in blender or use hand blender.
  5. Add the remaining petite pois, heat thoroughly and serve.
